Chef Aditya Fatehpuria brought together his experience in ISKCON, food research, hospitality, operations, and business development to create a restaurant dedicated to Satvic cuisine. His vision was to make Satvic food accessible, enjoyable, and aspirational for everyone.

Sattva is the quality of clarity and calm. A sattvic kitchen works from a simple premise: what you eat shapes how you feel for the rest of the day. So we cook to nourish, not to overwhelm.

That discipline is not a restriction for us. Working without the easy shortcuts means every dish has to earn its flavour honestly — from the spice, the ghee, the produce and the hands that prepare it.

  • No onion, no garlic

    Flavour comes from asafoetida, ginger, fresh herbs and slow-built masalas ground in our own kitchen — never from stimulants that agitate the body.

  • Cooked fresh, served the same day

    Food is prepared in small batches through service. Nothing is held overnight, nothing is reheated the next morning — freshness is the whole point.

The Visionary Behind Sattvam's Elevated Vegetarian Dining

At the heart of Sattvam – Elevated Vegetarian Dining is Chef Aditya Fatehpuria, a culinary professional who has dedicated his journey to redefining how India experiences vegetarian food.

His story began in the world of professional hospitality, where he trained in the discipline, precision, and pace of hotel kitchens. His true calling unfolded through his work with ISKCON Bangalore and Akshaya Patra, where food became more than a meal—it became nourishment for the body, mind, and spirit.

Chef Aditya's journey led him into India's sacred culinary traditions, including the revered temple cuisine of Jagannath Puri. Years of research, recipe documentation, experimentation, and hands-on kitchen experience revealed the incredible depth of vegetarian cuisine beyond the familiar dishes.

This vision became the foundation of Sattvam—to bring the purity of Satvic cuisine into a refined restaurant experience without losing its soul. Every dish is thoughtfully prepared with attention to freshness, balance, flavour, and presentation, creating an experience that feels traditional yet contemporary, simple yet elegant, soulful yet celebratory.

Chef Aditya believes Satvic cuisine is not a limitation but a beautiful creative challenge. A dish prepared without onion, garlic, meat, egg, or caffeine can still be rich in flavour, while a buffet inspired by temple traditions can be presented as a premium culinary experience.
